PALEO BANANA PANCAKES - PALEO FRIENDLY RECIPE
This is one of my all time favorite healthy recipes. These pancakes require no flour and use only natural ingredients. They are nothing short of AMAZING!
Ingredients:
1 banana
1 egg
1 tblsp of Almond Butter
1 tsp of cinnamon
1 tblsp of extra virgin olive oil or coconut oil
Directions:
In a medium size mixing bowl add the peeled banana
Mash the banana with a fork until it is completely broken down and almost liquefied
Add one cracked egg, the almond butter, and the cinnamon and mix all ingredients together until it forms a pancake like batter
Take a large frying pan and heat on medium-low
Add the oil
Once oil is hot, add dollops of batter in pancake like sizes (you can add blueberries, strawberries, or chopped walnuts optional)
Cook until one side is firm (about 3-5 minutes)
Flip each pancake and cook the other side until firm (about 3 minutes)

GRILLED SUGAR SNAP PEAS WITH PEANUT DIPPING SAUCE - PALEO FRIENDLY RECIPE
This quick and easy recipe is a favorite in my family. The almond dipping sauce is so good you could dip a leather shoe into it and eat it (don't do that though).
SNAP PEAS
1 pound sugar snap peas
1 tablespoon extra virgin olive oil
1 teaspoon lime juice
8-10 wood or bamboo skewers
ALMOND DIPPING SAUCE
1/3 cup natural almond butter
1/3 cup warm water
1 clove of garlic, minced
1 ½ teaspoons grated or minced ginger
2 tablespoons rice vinegar
2 teaspoons lime juice
2 teaspoons agave or honey
1 ½ teaspoons soy sauce or if strict paleo, coconut aminos
Mix together the almond butter and warm water in a glass until it is smooth. Add the rest of the ingredients for sauce and keep mixing until it is all uniform. Taste and adjust the seasoning so that you like it. Add more agave if you like stuff sweet, more garlic, whatever you like.
Cut the ends off your sugar snap peas because those can be stringy. Run a skewer through the peas width wise, with about 9 peas per stick. Mix together the oil and lime juice in a small glass and brush it over both sides of the peas so that they don’t stick when you grill them.
Bring your grill to a high heat and place the skewers on there for a minute or so on each side. You don’t need to cook them, you just want some char marks on there. Slide the peas off the skewers and sprinkle them lightly with salt. Serve with almond dipping sauce.
